Iodized salt is a type of table salt that has been fortified with a certain amount of iodine (in the form of compounds such as iodate or potassium iodide). This is done to prevent iodine deficiency in the body.
Why is iodine important?
Iodine is an essential element for the human body, its main role is in the function of the thyroid gland. This gland produces hormones that are essential for regulating metabolism (fuel metabolism), brain development, and physical growth.
What are the complications of iodine deficiency?
Goiter (enlarged thyroid gland)
Physical and mental development disorders in children
Reduced IQ in infants and children
Chronic fatigue and decreased concentration
Problems with pregnancy and fetal development
What are the characteristics of iodized salt?
It contains an appropriate amount of iodine. (Usually 20-40 mg per kg of salt)
Should be stored in packaging protected from light and moisture (as iodine is volatile).
Should be added to food at the end of the cooking process, as high heat may destroy some of the iodine.
